Preserve
Made using either whole or large pieces of fruit which are stored in their own juices and with pectin before the cooking process. The fruit maintains its shape and should stay plump as it cooks, and the final result should have a spreadable quality.

|
|
Marmalade
A well-balanced jelly with strips of mildly bitter citrus rind and a sweet and sour quality. The 'cut' refers to strips of peel used; Thin Cut Marmalade has finely grated peel and a much softer consistency, whereas Thick Cut has bigger pieces and a tangier flavour.

Did You Know?
The numbers featured on Fortnum’s fruit-led Preserve Jars are a nod to the Linnaean system, which classifies fruit and plants by number. Contrary to popular belief, they are not sequential.

Jelly
The smoothest consistency and should be crystal-clear in clarity. Cooked fruit is strained through a fine mesh fabric to ensure that no fruit pieces slip through then boiled rapidly with sugar and pectin to help it hold shape.

|
|
Curd
Are unique because they contain eggs, butter and are more similar to custard in texture. Fresh fruit juice and sugar provide the flavour of the curd, while the butter and egg yolks help thicken the mixture and add extra silkiness.
