Curator's Notes: No wonder this coffee is so vibrant: it comes from the Los Quetzales farm, named after the wildly colorful, but rarely seen, Quetzal bird. You know what else is rarely seen? Coffees with pineapple notes - one of my absolute favorite flavors in coffee. This Honduran microlot is sweet and sugary from the get-go, with a really bright opener of pineapple juice, but sparkling and almost effervescent, like a pineapple mimosa cocktail. The acidity is super mild, and soft, easing into a really smooth body like chocolate-covered acai berries, and (yes!) a purple-grapey bubble gum note. Finish is smooth, uplifting, with a sugary finale that reminds me of strawberry sweet-tart candies. Honduras Los Quetzales comes from mountainous Santa Barbara region, located near the border of Guatemala, and known for putting specialty Honduran coffee on the map. The Sagastume family has been producing coffee for three generations, and have placed in Cup of Excellence Honduras for three years in a row now! Their fully-organic certification is icing on the cake.
