Curator's Notes: Experimentally processed coffees are still finding their place in the specialty world, and they're far from easy to predict, with a spectrum of flavors from mild to wild. I tried my first one in 2019, I'm still never sure what they'll taste like until that first sip. In my opinion, the best ones are deep and sweet, with a creamy and a luxuriously full body- and this 58 Hour Aerobic Yellow Bourbon from Stamp Act delivers all that and more! At first sip, flavors are bright, juicy, berry-forward with a nice sunny citrus effervescence. With its big notes of berries, grapes, and citrus, this cup tastes like a handful of fruit-flavored candies... runts, skittles, you pick your favorite! Nice heavy sweetness like berry compote, maraschino syrup, or cherry liqueur, and a figgy, dark-chocolate underpinning. Stamp Act sourced this special lot of Yellow Bourbon from a direct relationship with Henrique Cambraia, a 4th generation coffee grower with multiple Cup of Excellence wins under his belt. Aerobic fermentation is a fancy way of saying, we're pushing this natural processed coffee just a little over the edge, to see what develops. In this case, it's a super decadent, utterly unique cup from one of Brazil's most prominent specialty coffee estates - and totally different from the mass-produced natural coffees that you typically see from Brazil.
